Delicious chocolate muffins, a great way to beat chocolate cravings!

Ingredients:

2 cup self-raising flour

1 cup plain flour

1 cup uncooked rolled oats

3 1/2 tsp baking powder (bi-carb)

3 Tbsp cocoa

2/3 cup honey

2 50g eggs, beaten

1/2 cup vegetable oil

3 cup low-fat vanilla yoghurt (or flavour of your choice)


Directions:

Preheat oven to 180°C. Line two muffin trays with paper muffin cases.

Put all ingredients in a large bowl and mix together with a spoon. Spoon mixture into muffin cases, filling each about 3/4 full or until all the mixture is used up. This mixture will make 24 muffins.

Bake for 25 to 30 minutes.

Variations:

For different flavoured muffins, experiment with bananas, blueberries, dried dates and apricots, or your favourite combinations.

I just made these, but I didnt have any cocoa. So i added 1/2 a large can of pie apple, halved the oil and honey and added 1/2 tsp cinnamon! Also made into mini muffins, so half the calories!

I made them with strewberry jam, are great! Also put them in cupcake patties instead, made 57 so 72 cal each! perfect
