This dressing is an avocado lover's dream come true.

Ingredients:

1 cup natural low-fat yogurt

1 small ripe avocado

2 tsp honey

1/2 tsp lemon rind, grated

1 Tbsp lemon juice

1 tsp grated ginger


Directions:

Peel and mash avocado.

Blend all ingredients well in a food processor or blender.

Delicious! I cooked up some chicken and leek with a little ginger, spread this dressing on a tortilla then added the chicken and some salad :)
